We're big fans of tahini dressing and here's one of our favorite combinations. Our typical salads include chopped kale and romaine lettuce, grated carrots, diced cucumber, tomatoes, and bell peppers, and thinly sliced cabbage. We also like topping our salads with cooked quinoa and beans for a complete meal. And for a special feast, we top it all with chopped Tofu Cutlets, crumbled tortilla chips, salsa, and guacamole. Yum!
- 5 Tablespoons tahini
- 4 Tablespoons rice vinegar (or lemon juice)
- 2 Tablespoons water
- 2 Tablespoons frozen orange juice concentrate
- salt to taste
- In a jar or mixing cup, add the tahini and vinegar and stir until well combined.
- Add the water, orange juice concentrate, and salt, and stir until smooth. Add a little more water for a thinner dressing.
Yields: about ¾ cup
