Kiwi Lime Pie

I must admit, I've never had a Key Lime Pie before. But I felt inspired the other day in the produce section, and picked up my first batch of those cute little limes. Instead of the traditional lime pie, loaded with fat and sugar, I decided to try a tofu version and use a couple thickeners, kudzu and agar to give the filling a nice rich texture. (Kudzu and agar are both available in most health food stores.) If you don't have any limes on hand, you can make it lemon meringue, chocolate, or coconut flavored. Enjoy!
